Called decorticato in italian, this is the whole grain in it's purest form with all the outer bran intact. Hulled grains typically need to be pre-soaked in water before cooking.
8-12 hours is more than sufficient for most applications with a 20-30 minute cooking time.

Roasted Barley (Orzo Mondo Tostato)
Orzo Mondo is what the Italians call a special variety of 2 row barley. What makes it special, aside from its high nutritional value, is the fact that it is a free threshing or "naked" barley. While it can be utilized the same way as standard barley, it is almost aways roasted like coffee to make an excellent caffeine free beverage.
Roasted Barley is brewed by many cultures—the Japanese drink a tea called Mugicha; the Koreans a tea they call Horicha (pronounced Boricha).
